Students ARE going to use it, the question is can we control HOW it will be used? You could create bots, programmed with specific answers to specific questions and allow students to put it to use. To ensure students AI use is appropriate, be prepared to quiz students orally on what they have submitted. if they have to memorize it to repeat it, they HAVE learned it. For evaluation, have the students change the point being evaluated in class to prove they have the critical thinking skills showed in the original submission.

AI is a tool, the only thing typically stopping teachers from using it is the time it takes to learn it. Once that obstacle has been overcome it can be an incredibly rewarding experience.
